Nutoka Marmalade Orange Pancakes

Ingredients  

  • 100g Plain Flour
  • 2x Medium Eggs
  • 300ml Semi Skimmed Milk
  • Grated Rindx 1 Large Orange
  • 120g Nutoka
  • 150ml Fresh Orange Juice
  • 100g Marmalade
  • 1x Heaped Tsp Cornflour
  • 40ml Lemon Juice
  • Pinch Salt
  • Sunflower Oil

Method

  1. First make the sauce
  2. Put the orange juice and marmalade in a small saucepan – heat through to melt the marmalade
  3. Mix the cornflour with the lemon juice – pour into the orange – bring to the boil, stirring as it thickens – put to one side
  4. Make the pancakes
  5. Sift the flour and salt into a bowl
  6. Crack the eggs into the milk and beat to mix
  7. Make a well in the flour and slowly add the milk mixture, beating as you go till you have a smooth batter
  8. Make 8 pancakes out of the batter in a non-stick frying pan – greased with a little sunflower oil
  9. Spread each pancake with some nutoka, fold over and keep warm in the oven while you cook the rest
  10. Serve the pancakes with the orange and marmalade sauce
