Nutoka Marmalade Orange Pancakes

Ingredients
- 100g Plain Flour
- 2x Medium Eggs
- 300ml Semi Skimmed Milk
- Grated Rindx 1 Large Orange
- 120g Nutoka
- 150ml Fresh Orange Juice
- 100g Marmalade
- 1x Heaped Tsp Cornflour
- 40ml Lemon Juice
- Pinch Salt
- Sunflower Oil
Method
- First make the sauce
- Put the orange juice and marmalade in a small saucepan – heat through to melt the marmalade
- Mix the cornflour with the lemon juice – pour into the orange – bring to the boil, stirring as it thickens – put to one side
- Make the pancakes
- Sift the flour and salt into a bowl
- Crack the eggs into the milk and beat to mix
- Make a well in the flour and slowly add the milk mixture, beating as you go till you have a smooth batter
- Make 8 pancakes out of the batter in a non-stick frying pan – greased with a little sunflower oil
- Spread each pancake with some nutoka, fold over and keep warm in the oven while you cook the rest
- Serve the pancakes with the orange and marmalade sauce
