Scottish Fudge and Tablet Cheesecake

Bring a taste of Scotland to the humble cheesecake with this braw recipe.

Ingredients
For the Base:
- 100g Oaties biscuits
- 50g Salted butter
For the Filling (makes 575g of filling):
- 100g Aldi white chocolate buttons
- 150g Aldi cream cheese
- 125g Aldi Mascarpone cheese
- 50g Scottish fudge
- 150ml Scottish double cream
For the Topping:
- 40g White chocolate, melted
- 100g Tablet, crumbled
Method
- Place Oaties biscuits in a bag and bash with a rolling pin.
- Melt butter and mix with crushed biscuits.
- Smooth the base into a suitable cake tin (a floating bottom one is perfect).
- Allow base to chill in fridge for at least 30 minutes (you can do the next part while you wait).
- Beat together the cream cheese, the mascarpone cheese and the double cream with and electric whisk.
- Gently melt the white chocolate (You can either do this in a microwave on a low W setting or over a pot of boiling water - the microwave is much safer for kids).
- Once melted add it to the cheesecake mixture and continue whipping up using the beaters.
- Chop up the fudge pieces using a knife, gently fold into the cheesecake mixture.
- Smooth filling on top of biscuit base and allow to chill and set.
- Before serving melt 40g white chocolate and drizzle over top of cheesecake.
- Crumb tablet using a knife or even a grater and sprinkle over before serving.
