Sticky Toffee Pear Traybake

Ingredients

  • 2 Pears, peeled, seeds discarded and each sliced into 3
  • 1 tsp Fresh Ginger, grated
  • 180g Dates, stoned and chopped
  • 175ml boiling water
  • 80g Salted Butter, melted
  • 175g Soft Dark Brown Sugar
  • 280g Self Raising Flour
  • 1 tsp Baking Powder
  • 1 tsp Bicarbonate of Soda
  • 75g Golden Syrup
  • 3 Large Eggs
  • 130ml Whole Milk
  • 150g Toffee Dessert Sauce

To serve

  • Vanilla Ice Cream

  

Method

  1. Pour the boiling water over the dates and microwave for 2 minutes. Allow this to cool slightly then pulse in a blender until smooth.
  2. Pre-heat the oven to 180oC /160oC Fan/Gas Mark 4 and line a baking tray approximately 30 x 20cm.
  3. Take a large mixing bowl and add the butter, sugar, ginger, eggs, flour, baking powder, bicarbonate of soda and syrup. Beat until combined, add the date mixture and then gradually stir in the milk. Pour the mixture into the baking tray and top with the pears. Bake for 40-45 minutes until the sponge is fully cooked. Take a cocktail stick and prick the cake all over then pour over the toffee sauce whilst the cake is hot, allowing it to seep into the sponge and glaze the pears.
