Strawberries and Cream Cheesecake Fries

Ingredients
For the cheesecake:
- 190g Digestive Biscuits
- 135g Butter
- 170ml Double Cream
- 150g Icing Sugar
- ¼ tsp Vanilla Essence
- 200g Soft Cheese
For the dip:
- 150g Strawberries, hulled
- 20g Icing Sugar
You will need a square baking tin or brownie pan around 25 x 25cm lined with greaseproof paper and a crinkle cutter/knife
Method
- Crush the digestive biscuits using a sandwich bag and rolling pin until you have fine crumbs.
- Melt the butter in a saucepan over a low heat, then tip in the biscuits and stir well.
- Press the mixture into the tin using the back of a wooden spoon to make sure it is an even flat layer. Place it into the fridge to firm up.
- Take a large bowl and add the cream, icing sugar and vanilla essence, and whisk with a hand mixer until you have thick cream, then fold in the cream cheese.
- Pour the mixture over the biscuit base and place in the fridge overnight to set. Once set, cut into 12 fingers/fries using your crinkle cutter.
- Make the dip by blending the strawberries with the sugar and allow this to macerate in the fridge overnight.
- Serve on a board with the dip in a pot.
