Strawberries and Cream Cheesecake Fries

Ingredients

For the cheesecake:

  • 190g Digestive Biscuits
  • 135g Butter
  • 170ml Double Cream
  • 150g Icing Sugar
  • ¼ tsp Vanilla Essence
  • 200g Soft Cheese

  

For the dip:

  • 150g Strawberries, hulled
  • 20g Icing Sugar

You will need a square baking tin or brownie pan around 25 x 25cm lined with greaseproof paper and a crinkle cutter/knife

Method  

  1. Crush the digestive biscuits using a sandwich bag and rolling pin until you have fine crumbs.
  2. Melt the butter in a saucepan over a low heat, then tip in the biscuits and stir well.
  3. Press the mixture into the tin using the back of a wooden spoon to make sure it is an even flat layer. Place it into the fridge to firm up.
  4. Take a large bowl and add the cream, icing sugar and vanilla essence, and whisk with a hand mixer until you have thick cream, then fold in the cream cheese.
  5. Pour the mixture over the biscuit base and place in the fridge overnight to set. Once set, cut into 12 fingers/fries using your crinkle cutter.
  6. Make the dip by blending the strawberries with the sugar and allow this to macerate in the fridge overnight.
  7. Serve on a board with the dip in a pot.
