Cherry Vanilla Iced Latte

This oh so nice cherry latte has hints of vanilla to really put a pep in your step.
Serves: 1 person | Prep time: 5 minutes | Cooking time: 25 minutes (for the syrup)

Ingredients
- 200g pack Cherries
- 60g Caster Sugar
- 180ml Water
- 1 tsp Vanilla Essence
- 100ml Milk of your choice
- 2 shots Espresso (or 60ml Black Coffee)
- Ice Cubes
Method
- To make the cherry syrup, start by stoning the cherries and cut into quarters.
- Put into a small saucepan along with the water, sugar and vanilla essence.
- Slowly bring to the boil to melt the sugar.
- Then, cover and simmer for 25 minutes.
- Allow to cool slightly then liquidise to a thick syrup.
- This keeps well in the fridge in an airtight container for 10 days.
- To make the latte, pour 50ml of the cherry syrup into the bottom of a tall latte glass and add some ice cubes.
- Whisk or froth the milk and gently pour on top of the ice.
- Then, gently pour the espresso or black coffee on top and serve.
- Stir and enjoy.
