Sakura Cherry Mojito Mocktail

As beautiful as it is tasty, this mocktail will transport your tastebuds to Japanaese Cherry Blossom season.

Ingredients
For the Cherry Syrup:
- 200g Frozen Cherries
- 200g Caster Sugar
For the Mojito:
- Leaves from 2 sprigs of Mint
- 25ml Lime Juice
- Soda Water
- 30ml Cherry Syrup
- Ice
To garnish:
- 1 Fresh Cherry
- 1 slice of Lime
- 1 sprig of Mint
Method
- Place the cherries and caster sugar into a saucepan along with 100ml water.
- Bring to a boil, then carefully mash the cherries using a potato masher.
- Simmer for 8-10 minutes until thickened enough to coat the back of a spoon.
- Leave to cool, then pour through a sieve and store in a jar, the leftover syrup can be used for drinks, desserts, yogurt pots etc.
- To make the cherry mojito, place the mint leaves and lime juice into the base of a tall glass and muddle the top with ice.
- Pour the soda water over the ice until the glass is about ¾ full, then pour over the cherry syrup.
- Garnish with the additional cherry, lime and mint and serve.
