Sakura Cherry Mojito Mocktail

As beautiful as it is tasty, this mocktail will transport your tastebuds to Japanaese Cherry Blossom season.

Ingredients

For the Cherry Syrup:

  • 200g Frozen Cherries
  • 200g Caster Sugar

For the Mojito:

  • Leaves from 2 sprigs of Mint
  • 25ml Lime Juice
  • Soda Water
  • 30ml Cherry Syrup
  • Ice

To garnish:

  • 1 Fresh Cherry
  • 1 slice of Lime
  • 1 sprig of Mint

  

Method

  1. Place the cherries and caster sugar into a saucepan along with 100ml water.
  2. Bring to a boil, then carefully mash the cherries using a potato masher.
  3. Simmer for 8-10 minutes until thickened enough to coat the back of a spoon.
  4. Leave to cool, then pour through a sieve and store in a jar, the leftover syrup can be used for drinks, desserts, yogurt pots etc.
  5. To make the cherry mojito, place the mint leaves and lime juice into the base of a tall glass and muddle the top with ice.
  6. Pour the soda water over the ice until the glass is about ¾ full, then pour over the cherry syrup.
  7. Garnish with the additional cherry, lime and mint and serve.
