15 Minute Caprese Mac and Cheese

Ingredients

  • 250g Macaroni
  • 80g Pancetta
  • 1 tsp Olive Oil
  • 300ml Double Cream
  • 100g Brie, rind removed and cubed
  • 150g Cheddar, grated
  • 35g Parmesan, grated
  • 100ml Whole Milk
  • ½ tbsp Cornflour, mixed with 1 tbsp Water
  • 1 tsp Pesto
  • ½ tsp Mixed Herbs
  • 1 tsp English Mustard
  • 2 Vine Tomatoes, sliced
  • 6 Cherry Tomatoes, halved
  • 20g Savoury Crackers
  • 20g Basil, to garnish
  • Salt and Cracked Black Pepper, to serve

To cook:

  • You will need a medium-sized rectangular dish    

  

Method

  1. Take a frying pan and large saucepan and put aside. Take another large saucepan and fill it with boiling water, then place on the hob to heat it up.
  2. Place the cream, all the cheeses (reserving a little of the Cheddar for sprinkling), the milk, cornflour, cream, pesto and mustard in the empty large saucepan.
  3. Place all three pans on the hob. Put the frying pan on a high heat and add the pancetta. Put the pan of boiling water on a high heat and add the pasta to this. After 5 minutes, put the saucepan full of cheese on a very low heat. Stir the pancetta and the cheese sauce every few minutes.
  4. Once the pasta is cooked, drain it in a colander and add to the cheese sauce, then tip in the pancetta.
  5. Transfer to a rectangular baking dish and sprinkle over a little cheddar. Place the sliced tomatoes on top and crumble the crackers over, then place under the hot grill for five minutes until it’s bubbling and piping hot. Garnish with basil, season well and enjoy.
