All Day Breakfast Jacket Potatoes

If you love a good old fry up, why not jazz up your jacket potato with this tasty recipe?
Serves: 4 people | Prep time: 5 minutes | Cooking time: 20 minutes (plus potato baking time)

Ingredients
- 4 Jacket Potatoes
- 8 Specially Selected Pork Chipolata Sausages
- 8 rashers Specially Selected Streaky Smoked Bacon
- 1 x 410g tin Baked Beans
- 16 Piccolino Cherry Tomatoes
- 100g Grated Cheddar Cheese
- 80g Salted Butter
- 200g Baby Button Mushrooms
- 4 medium Eggs
- Sunflower Oil
- Sea Salt and Black Pepper
Method
- Cook the potatoes as the base recipe.
- Put the bacon and sausages on a baking tray and bake in the oven for 15 minutes.
- Roast the tomatoes in the oven for 10 minutes.
- Wipe the mushrooms and cut into quarters and sauté in a frying pan for 4 minutes, drain once cooked and keep warm.
- Heat the beans in a pan.
- Fry the eggs until just set.
- Assemble the potatoes by splitting each in half and adding an equal amount of the butter to each.
- Add the grated cheese and top with the beans.
- Cut the sausages in half and share these between the spuds, then add two rashers of bacon per potato.
- Then, add the fried eggs and lastly the cherry tomatoes, season and serve.
