Aperini Salmon with Avocado Cucumber Salsa

A refreshing and zesty salmon recipe.

Ingredients

  • 500g Salmon Fillet
  • 3 tbsp Sea Salt
  • 1 tbsp Sugar
  • 50ml Aperini
  • 10g Parsley, chopped finely
  • Zest of 1 Orange
  • Zest of 1 Lemon

For the salsa:

  • 1 Avocado, diced
  • 1/4 Cucumber, diced
  • 10g Coriander, chopped
  • Juice of 1/2 a Lime
  • A pinch of Salt
  • ½ tsp Honey

To serve:

  • Flatbread Thins  

  

Method

  1. Mix the salt and sugar, sprinkle on the fish and pour over the Aperini. Place the fish in the fridge for 12 hours.
  2. Wipe the fish dry with a paper towel.
  3. Mix the zest and herbs and spread on top of the fish. Wrap this tightly in greaseproof paper, then in cling film and place in the refrigerator overnight.
  4. To make the salsa, mix all the ingredients together in a small bowl.
  5. Remove the fish from the refrigerator and serve with salsa and some flatbread thins.
