Aperini Salmon with Avocado Cucumber Salsa

A refreshing and zesty salmon recipe.

Ingredients
- 500g Salmon Fillet
- 3 tbsp Sea Salt
- 1 tbsp Sugar
- 50ml Aperini
- 10g Parsley, chopped finely
- Zest of 1 Orange
- Zest of 1 Lemon
For the salsa:
- 1 Avocado, diced
- 1/4 Cucumber, diced
- 10g Coriander, chopped
- Juice of 1/2 a Lime
- A pinch of Salt
- ½ tsp Honey
To serve:
- Flatbread Thins
Method
- Mix the salt and sugar, sprinkle on the fish and pour over the Aperini. Place the fish in the fridge for 12 hours.
- Wipe the fish dry with a paper towel.
- Mix the zest and herbs and spread on top of the fish. Wrap this tightly in greaseproof paper, then in cling film and place in the refrigerator overnight.
- To make the salsa, mix all the ingredients together in a small bowl.
- Remove the fish from the refrigerator and serve with salsa and some flatbread thins.
