Cauliflower Truffle Cheese Bake

Ingredients
- 1 Large Cauliflower
- 50g Salted Butter
- 50g Plain Flour
- 550ml Milk
- 125g Barbers Truffle Cheddar, grated
- 1 flat tsp English Mustard
- ½ tsp Paprika
- Few sprigs Rosemary
- Sea Salt and White Pepper
Method
- Preheat the oven to 200c/Gas 6
- Remove the leaves from the cauliflower and trim the base.
- Cook in some salted boiling water for 7 minutes and drain well.
- Put into an oval baking dish.
- To, make the sauce, melt the butter in a medium saucepan.
- Add the flour and cook on a low heat for a minute, then slowly add the milk, whisking as you cook until you have a smooth sauce.
- Season with some salt and pepper and the paprika.
- Add most of the grated cheese, keeping some back for sprinkling.
- Put the cauliflower in the dish, pour over the sauce, add the sprigs of rosemary and sprinkle over the remaining cheese.
- Bake in the oven for 20 minutes until golden.
