Cauliflower Truffle Cheese Bake

Ingredients

  • 1 Large Cauliflower
  • 50g Salted Butter
  • 50g Plain Flour
  • 550ml Milk
  • 125g Barbers Truffle Cheddar, grated
  • 1 flat tsp English Mustard
  • ½ tsp Paprika
  • Few sprigs Rosemary
  • Sea Salt and White Pepper

  

Method

  1. Preheat the oven to 200c/Gas 6
  2. Remove the leaves from the cauliflower and trim the base.
  3. Cook in some salted boiling water for 7 minutes and drain well.
  4. Put into an oval baking dish.
  5. To, make the sauce, melt the butter in a medium saucepan.
  6. Add the flour and cook on a low heat for a minute, then slowly add the milk, whisking as you cook until you have a smooth sauce.
  7. Season with some salt and pepper and the paprika.
  8. Add most of the grated cheese, keeping some back for sprinkling.
  9. Put the cauliflower in the dish, pour over the sauce, add the sprigs of rosemary and sprinkle over the remaining cheese.
  10. Bake in the oven for 20 minutes until golden.
