Creamy Pesto King Prawn Linguini

Ingredients

  • 2 x 138g The Fishmonger King Prawns in a Creamy Pesto Sauce
  • 200g Spaghetti
  • 80g Tender stem Broccoli
  • 60g Frozen Peas
  • 50g Baby Spinach
  • 2 tbsp Lemon Juice   
  • Pinch of Salt
  • Pinch of Pepper

To serve:

  • Shaved Parmesan
  • Fresh Basil
  • Lemon wedge

Method

  1. Cook the spaghetti in boiling salted water for 8 minutes.
  2. Cook the prawns in creamy pesto sauce as per the pack instructions.
  3. Boil the broccoli in the pasta water for the last 2 minutes of cooking time.
  4. Save half a cup of the pasta water then drain the pasta and broccoli and place back into the pan along with the prawns and pesto sauce.
  5. Add the peas, spinach and fresh lemon juice and cook until the spinach has wilted.
  6. If the pasta gets too dry add some of the saved pasta water.
  7. Season with salt and pepper and serve topped with parmesan shavings, fresh basil and lemon wedges.
