Creamy Pesto King Prawn Linguini

Ingredients
- 2 x 138g The Fishmonger King Prawns in a Creamy Pesto Sauce
- 200g Spaghetti
- 80g Tender stem Broccoli
- 60g Frozen Peas
- 50g Baby Spinach
- 2 tbsp Lemon Juice
- Pinch of Salt
- Pinch of Pepper
To serve:
- Shaved Parmesan
- Fresh Basil
- Lemon wedge
Method
- Cook the spaghetti in boiling salted water for 8 minutes.
- Cook the prawns in creamy pesto sauce as per the pack instructions.
- Boil the broccoli in the pasta water for the last 2 minutes of cooking time.
- Save half a cup of the pasta water then drain the pasta and broccoli and place back into the pan along with the prawns and pesto sauce.
- Add the peas, spinach and fresh lemon juice and cook until the spinach has wilted.
- If the pasta gets too dry add some of the saved pasta water.
- Season with salt and pepper and serve topped with parmesan shavings, fresh basil and lemon wedges.
