Garlic Butter Cod

Ingredients
- 250g Boneless Cod Fillets
- 50g Butter
- 2 tbsp Olive Oil
- 3 Garlic cloves, finely chopped
- 2 tbsp Lemon Juice
- Pinch of Salt
- Pinch of Pepper
To serve:
- 120g Cherry Tomatoes
- 100g Asparagus
Method
- Preheat your oven to 200c/180c fan/gas mark 6
- Roast the cherry tomatoes for 10 minutes until just starting to soften.
- While the tomatoes cook, blanch the green beans and asparagus in salted boiling water for 1 minute, then put them into ice water to stop them cooking.
- Place the butter and olive oil in a frying pan then add the garlic and cook for a couple of minutes.
- Pan fry the cod in the garlic butter for 5 minutes on each side.
- When the cod is cooked add the lemon juice and season with the salt and pepper, then remove from the pan.
- Add the asparagus and green beans to the garlic butter then cook for a couple of minutes.
- Plate the cod with the garlic butter, roasted tomatoes and a wedge of lemon.
- Serve with the green beans and asparagus topped with grated parmesan.
