Garlic Butter Cod

Ingredients

  • 250g Boneless Cod Fillets
  • 50g Butter
  • 2 tbsp Olive Oil
  • 3 Garlic cloves, finely chopped
  • 2 tbsp Lemon Juice
  • Pinch of Salt
  • Pinch of Pepper

To serve:

  • 120g Cherry Tomatoes
  • 100g Asparagus  

Method

  1. Preheat your oven to 200c/180c fan/gas mark 6
  2. Roast the cherry tomatoes for 10 minutes until just starting to soften.
  3. While the tomatoes cook, blanch the green beans and asparagus in salted boiling water for 1 minute, then put them into ice water to stop them cooking.
  4. Place the butter and olive oil in a frying pan then add the garlic and cook for a couple of minutes.
  5. Pan fry the cod in the garlic butter for 5 minutes on each side.
  6. When the cod is cooked add the lemon juice and season with the salt and pepper, then remove from the pan.
  7. Add the asparagus and green beans to the garlic butter then cook for a couple of minutes.
  8. Plate the cod with the garlic butter, roasted tomatoes and a wedge of lemon.
  9. Serve with the green beans and asparagus topped with grated parmesan.
