Green Goddess Bagel

Ingredients
- 4 Sesame Seed Bagels
- 400g Chickpeas
- 10g Flat Leaf Parsley
- 30g Spring Onions
- 1 tsp Dijon Mustard
- 1 tsp Lemon Juice
- 100g Mayonnaise
- 1 tsp Paprika
- Sea Salt and Black Pepper
- 4 Little Gem Lettuce Leaves
- 2 Baby Cucumbers
- 4 Radish
- 1 Medium Carrot
- 1 Large Avocado
- 1 pot of Salad Cress
- 1 Spring Onion
- Lemon Juice
Method
- Drain, wash and dry the chickpeas.
- Wipe the spring onion, then thinly slice half of it. Finely chop the parsley.
- Add the chickpeas, spring onion and parsley to a bowl with the mayonnaise, paprika, mustard and lemon juice. Season with salt and pepper, then mash everything together.
- Wipe and shred the remaining spring onion. Peel the carrot into ribbons with a peeler. Finely slice the radish and cucumbers.
- Cut the avocado in half, discard the stone, scoop out the flesh and slice thinly, then sprinkle over a little lemon juice.
- Cut the salad cress, then cut the bagels in half and spread some of the chickpea mixture on all sides.
- Top the 4 bottom slices with the lettuce, then divide the cucumber, radish, avocado, cress and onion between them. Lastly, add the bagel tops and serve.
