Margarita Margherita Pizza

Ingredients

  • 1 Ready Rolled Pizza Dough
  • 20ml Tequila

For the toppings:

  • 75g Mozzarella Cheese
  • 2 sprigs of Basil
  • 2 sprigs of Mint
  • 3 tbsp Passata
  • 1/6 of an Orange, zest and juice
  • 1 tsp Flaked Sea Salt
  • 1 tsp Parmesan
  • Chilli Flakes, optional

For the lime pickles:

  • 1 Lime, sliced into paper thin wheels
  • 1 tsp Salt

Method

  1. Preheat the oven to 220°C/210°C Fan/Gas Mark 8.
  2. Salt the limes for a few hours to soften the skins a little, then wipe away with a paper towel.
  3. Stretch the dough by hand into a thin round pizza base, then fold the edges over to create a crust. Place this on a well-floured pizza stone and brush it with tequila.
  4. Chop half the basil and half the mint and mix with the passata, adding the orange for sweetness. Spoon this onto the base and top with mozzarella.
  5. Sprinkle with salt and bake for 10-12 minutes.
  6. Remove from the oven and add the limes, herbs, parmesan and chill flakes.
