Margarita Margherita Pizza

Ingredients
- 1 Ready Rolled Pizza Dough
- 20ml Tequila
For the toppings:
- 75g Mozzarella Cheese
- 2 sprigs of Basil
- 2 sprigs of Mint
- 3 tbsp Passata
- 1/6 of an Orange, zest and juice
- 1 tsp Flaked Sea Salt
- 1 tsp Parmesan
- Chilli Flakes, optional
For the lime pickles:
- 1 Lime, sliced into paper thin wheels
- 1 tsp Salt
Method
- Preheat the oven to 220°C/210°C Fan/Gas Mark 8.
- Salt the limes for a few hours to soften the skins a little, then wipe away with a paper towel.
- Stretch the dough by hand into a thin round pizza base, then fold the edges over to create a crust. Place this on a well-floured pizza stone and brush it with tequila.
- Chop half the basil and half the mint and mix with the passata, adding the orange for sweetness. Spoon this onto the base and top with mozzarella.
- Sprinkle with salt and bake for 10-12 minutes.
- Remove from the oven and add the limes, herbs, parmesan and chill flakes.
