Meatball Pasta Bake

Recipe

A rich pasta dish topped with gorgeous Scottish cheddar cheese.

Ingredients

For the Sauce:

  • 800g Canned diced plum tomatoes (2 cans)
  • 200g Diced onions
  • 50g Tomato puree
  • 10g Sugar
  • 1 Bag of fresh basil leaves, chopped
  • 10g Garlic puree
  • 20ml Vegetable oil
  • Salt and pepper to taste

For the Main Recipe:

  • 1000ml Tomato and Basil sauce
  • 200g Dry pasta
  • 240g 12 x Aldi pork meatballs
  • 100g Scottish cheddar cheese

  

Method

For the Sauce:

  1. Add some oil to a wok.
  2. Add the onion and cook down until the onions begin to caramelise.  
  3. Add the garlic puree to the cooked onion mix.  
  4. Add tomato puree.
  5. Add canned tomatoes.
  6. Blend Sauce using a hand blender.
  7. Add chopped basil to the tomato sauce and allow to simmer for 10 minutes.

For the Main Recipe:

  1. Cook 200g dry pasta.
  2. Sear meatballs in a hot frying pan and transfer to oven to cook thoroughly for 15 minutes.
  3. Mix together tomato sauce, pasta and meatballs and transfer to an ovenproof dish.
  4. Top with grated Scottish cheddar.
  5. Sprinkle with mixed herbs of your choice.
  6. Cook on  180°F/200°C/Gas Mark 6 for 45 minutes.
