Meatball Pasta Bake
Recipe
A rich pasta dish topped with gorgeous Scottish cheddar cheese.

Ingredients
For the Sauce:
- 800g Canned diced plum tomatoes (2 cans)
- 200g Diced onions
- 50g Tomato puree
- 10g Sugar
- 1 Bag of fresh basil leaves, chopped
- 10g Garlic puree
- 20ml Vegetable oil
- Salt and pepper to taste
For the Main Recipe:
- 1000ml Tomato and Basil sauce
- 200g Dry pasta
- 240g 12 x Aldi pork meatballs
- 100g Scottish cheddar cheese
Method
For the Sauce:
- Add some oil to a wok.
- Add the onion and cook down until the onions begin to caramelise.
- Add the garlic puree to the cooked onion mix.
- Add tomato puree.
- Add canned tomatoes.
- Blend Sauce using a hand blender.
- Add chopped basil to the tomato sauce and allow to simmer for 10 minutes.
For the Main Recipe:
- Cook 200g dry pasta.
- Sear meatballs in a hot frying pan and transfer to oven to cook thoroughly for 15 minutes.
- Mix together tomato sauce, pasta and meatballs and transfer to an ovenproof dish.
- Top with grated Scottish cheddar.
- Sprinkle with mixed herbs of your choice.
- Cook on 180°F/200°C/Gas Mark 6 for 45 minutes.
