Mini Frittatas

A protein-rich snack which contributes to the growth and maintenance of muscle mass.

Ingredients

  • 6 eggs
  • 100ml milk
  • 200g feta cheese, cubed
  • Leftover or frozen vegetables (e.g. peppers, tomatoes, peas)
  • Olive oil, salt, and black pepper


Method

  1. Preheat oven to 180°C fan / 200°C / gas 6. Grease a muffin tray with olive oil.
  2. Crack eggs into a jug, whisk with milk, salt, and pepper.
  3. Divide vegetables and feta cubes between muffin tray pockets.
  4. Pour egg mixture over the fillings.
  5. Bake for 25–30 minutes until golden. Cool before storing in the fridge for up to a week. Enjoy as a snack, protein-rich breakfast, or with salad.
