Mini Frittatas
Recipe
A protein-rich snack which contributes to the growth and maintenance of muscle mass.
Serves: 12 Frittatas | Prep time: 10 minutes | Cooking time: 25-30 minutes
Ingredients
- 6 eggs
- 100ml milk
- 200g feta cheese, cubed
- Leftover or frozen vegetables (e.g. peppers, tomatoes, peas)
- Olive oil, salt, and black pepper
Method
- Preheat oven to 180°C fan / 200°C / gas 6. Grease a muffin tray with olive oil.
- Crack eggs into a jug, whisk with milk, salt, and pepper.
- Divide vegetables and feta cubes between muffin tray pockets.
- Pour egg mixture over the fillings.
- Bake for 25–30 minutes until golden. Cool before storing in the fridge for up to a week. Enjoy as a snack, protein-rich breakfast, or with salad.
