One-Tray Chicken with Greens and Colourful Veg

A fuss-free traybake rich in cruciferous veg - a plant-based source of calcium to support the maintenance of bones.

Ingredients

  • 2 red onions, cut into chunks
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 500g baby potatoes, halved
  • 4 chicken thighs
  • 200g tenderstem broccoli, halved
  • 100g shredded kale or cavolo nero (stems removed)
  • Juice and zest of 1 lemon
  • 2 tsp garlic paste
  • 2 tbsp paprika
  • 1 chicken stock pot
  • 1 tsp thyme
  • 2 tbsp olive oil


Method

  1. Preheat oven to 180°C fan / 200°C / gas 6. Toss onions, peppers, and potatoes with olive oil and paprika in a roasting tin. Roast for 15 minutes.
  2. Mix garlic paste, lemon zest, and thyme; rub over chicken. Add chicken to tray, nestling under veg. Roast for 30 minutes.
  3. Add broccoli and kale. Mix lemon juice, stock pot, and 200ml boiling water; pour over tray. Cover with foil and bake for 10 minutes until broccoli is tender.
  4. Serve hot as a complete one-tray meal.
