One-Tray Chicken with Greens and Colourful Veg

A fuss-free traybake rich in cruciferous veg - a plant-based source of calcium to support the maintenance of bones.
Serves: 4 | Prep time: 15 minutes | Cooking time: 50 minutes
Ingredients
- 2 red onions, cut into chunks
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 500g baby potatoes, halved
- 4 chicken thighs
- 200g tenderstem broccoli, halved
- 100g shredded kale or cavolo nero (stems removed)
- Juice and zest of 1 lemon
- 2 tsp garlic paste
- 2 tbsp paprika
- 1 chicken stock pot
- 1 tsp thyme
- 2 tbsp olive oil
Method
- Preheat oven to 180°C fan / 200°C / gas 6. Toss onions, peppers, and potatoes with olive oil and paprika in a roasting tin. Roast for 15 minutes.
- Mix garlic paste, lemon zest, and thyme; rub over chicken. Add chicken to tray, nestling under veg. Roast for 30 minutes.
- Add broccoli and kale. Mix lemon juice, stock pot, and 200ml boiling water; pour over tray. Cover with foil and bake for 10 minutes until broccoli is tender.
- Serve hot as a complete one-tray meal.
