Pickle Sandwich

Pickle lovers will adore this fun take on a classic sandwich.

Ingredients

  • 70g Grated cheddar cheese
  • 12 Gherkin slices, patted dry with kitchen roll

For the Filling:

  • 1tbsp Caesar dressing
  • 3 Baby gem lettuce leaves
  • ½ Tomato, sliced
  • 2 slices of Bacon
  • 1 Breaded chicken steaks

  

Method

  1. Pre-heat the oven to 200°C /180°C Fan /Gas mark 6.
  2. Line a small baking tray with parchment paper and sprinkle over 1/2 the cheese.
  3. Arrange the pickles by slightly overlapping 6 on each side of the baking tray, creating a gap down the middle so they don’t touch. Sprinkle on the other half of the cheese.
  4. Bake for 15-20 minutes until the cheese is golden and crispy, then allow these to cool for 5 minutes.
  5. Cook the chicken and bacon as per cooking instructions, then assemble the fillings and caesar dressing in between the pickle slices.
