Take your tastebuds to Hawaii with this nutritious and filling lunch packed with prawns and fresh ingredients.

Ingredients
- 2x 150g Packs Coldwater Prawns
- 2x 125g Boil In The Bag Rice
- 1x Large Avocado
- 350g Carrots
- 1x Cucumber
- 1x Red Pepper
Method
- Cook the rice as directions on the pack and allow to cool
- Peel the carrot and then using a peeler make ribbons with them
- With the peeler make ribbons with the cucumber
- Cut the avocado in half, remove the stone and scoop out the flesh and chop into small chunks
- Chop the pepper into small chunks – discard the pith and seeds
- Mix the peppers and avocado together
- Divide all the ingredients into 4 bowls and serve
