Take your tastebuds to Hawaii with this nutritious and filling lunch packed with prawns and fresh ingredients.

Ingredients  

  • 2x 150g Packs Coldwater Prawns
  • 2x 125g Boil In The Bag Rice
  • 1x Large Avocado
  • 350g Carrots
  • 1x Cucumber
  • 1x Red Pepper

Method

  1. Cook the rice as directions on the pack and allow to cool
  2. Peel the carrot and then using a peeler make ribbons with them
  3. With the peeler make ribbons with the cucumber
  4. Cut the avocado in half, remove the stone and scoop out the flesh and chop into small chunks
  5. Chop the pepper into small chunks – discard the pith and seeds
  6. Mix the peppers and avocado together
  7. Divide all the ingredients into 4 bowls and serve
