Slow Cooked Ribs with Macaroni Cheese

- 1 pack Slow Cooked Maple BBQ Pork Ribs
- 225g Mature Cheddar
- 80g Parmesan
- 50g Mozzarella, grated
- 400g Macaroni Pasta
- 3 tbsp Butter
- 3 tbsp Plain Flour
- 550ml Whole Milk
- 1 tsp English Mustard
- 1 tbs Ready Set Cook Chives
Method
- Pre-heat the oven to 200°C/180°F/Gas Mark 6.
- Cook the ribs as per pack instructions.
- Grate the cheddar and parmesan.
- Melt the butter in a large saucepan and add the flour. Cook for 2 minutes then stir in the mustard. Whilst whisking, gradually add the milk until you have a smooth, thick sauce. Remove from the heat and stir through three-quarters of the grated cheddar and parmesan.
- Boil the pasta for 2 minutes less than recommended on the pack, then drain.
- Mix the cooked pasta through the cheese sauce and pour into an oven-proof dish.
- . Sprinkle over the remaining grated cheese, along with the grated mozzarella, and bake for 25 minutes until golden.
- Slice the cooked ribs and sprinkle with the chives.
- Serve alongside the mac and cheese.
