Spicy Margarita Chicken and Chorizo Pasta

This spicy pasta dish encompasses delicious chorizo and tasty chicken.

Ingredients
For the chicken:
- 2 Chicken Breasts
- 1tsp Soy Sauce
- 1/4tsp Cracked Black Pepper
- 2 x Garlic Cloves-Minced
- 2 tbsp Lime Juice
- 2 tbs Chicken Seasoning
For the pasta:
- 300g Spaghetti
- 2 tbsp Olive Oil
- 2 tbs Sesame Seeds
- 1 Clove Garlic Chopped
- 1/4 Red Chilli -some chopped fine and a few slices for garnishing
- 75g Mild Chorizo- diced
- 1 tsp Paprika
- 20ml Tequila (optional)/water can be used
- 25ml Sriracha
To garnish:
- 4 x Lime Wedges
- 1/4 tsp Chicken Seasoning
- 15g Coriander-chopped
Method
- Take the chicken breast and pound using a rolling pin to flatten a little-around 1.7cm thick. Place the breasts in a ziplock bag and add all marinade ingredients, rub the marinade into the chicken using your fingers on the outside of the bag. Allow this to marinade at room temperature for around 1 hour/overnight in the fridge for a deeper flavour.
- Place the chicken on a metal tray, under a hot grill for about 4 minutes on each side until the flesh is white and each side is caramelised, with a little charring.
- Take the sesame seeds (reserving a teaspoon full for decoration) and 1 tsp olive oil and grind using a pestle and mortar until you have a tahini paste - set to one side.
- Place the pasta In a large pot of boiling salted water and cook on a high heat until the pasta is al dente, drain and reserve a little of the pasta water.
- Whilst the pasta is cooking take a large frying pan and heat the remaining oil on medium high. Add the garlic, diced chilli and chorizo, stir and add the paprika, stir again, tip in the tequila/Water, to deglaze the pan, now add in the honey sriracha a little pasta water and the pasta, stir well.
- To serve, slice the chicken into strips, place it on top of the pasta. Sprinkle over the coriander, chicken seasoning, chilli and remaining sesame seeds. Add the lime Wedges and serve whilst piping hot. (Decorate the rim of the plate with a little extra chicken seasoning if you wish it is a spicy marg after all!)
