Brie Dauphinoise

Ingredients
- 1 tbsp Butter
- 1kg Maris Piper Potatoes
- 450ml Double Cream
- 250ml Milk
- 3 Garlic Cloves
- 3 sprigs of Thyme
- Pinch of Salt
- Pinch of Pepper
- 150g Brie, sliced
Method
- Preheat the oven to 190°C/170°C Fan/Gas Mark 5 and grease your ovenproof dish with the butter.
- Peel and slice the potatoes thinly (around 3-4mm).
- Mix the cream, milk, garlic, thyme, salt and pepper.
- Pour the cream mixture over the potatoes and mix.
- Layer the potatoes in the oven dish and pour over the remaining cream mixture.
- Cover and bake for 60-90 minutes until the potatoes are cooked through.
- Top with the sliced brie and cook, uncovered, for an extra 10 minutes until the cheese has melted and started to turn golden.
