Brie Dauphinoise

Rich and tasty, this tasty take on the classic Dauphinoise is sure to be a hit.

Ingredients

  • 1 tbsp Butter
  • 1kg Maris Piper Potatoes
  • 450ml Double Cream
  • 250ml Milk
  • 3 Garlic Cloves
  • 3 sprigs of Thyme
  • Pinch of Salt
  • Pinch of Pepper
  • 150g Brie, sliced

  

Method

  1. Preheat the oven to 190°C/170°C Fan/Gas Mark 5 and grease your ovenproof dish with the butter.
  2. Peel and slice the potatoes thinly (around 3-4mm).
  3. Mix the cream, milk, garlic, thyme, salt and pepper.
  4. Pour the cream mixture over the potatoes and mix.
  5. Layer the potatoes in the oven dish and pour over the remaining cream mixture.
  6. Cover and bake for 60-90 minutes until the potatoes are cooked through.
  7. Top with the sliced brie and cook, uncovered, for an extra 10 minutes until the cheese has melted and started to turn golden.
