Ghost BOO-schetta

Kick start spooky season the right way with these ghoulsly good BOO-schetta!

Ingredients

  • 250g Chestnut Mushrooms
  • 90g Spinach
  • 60g Sun Dried Tomatoes
  • 2 Garlic Cloves, crushed
  • 3 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • Pinch of Salt
  • Pinch of Pepper
  • 1 Specially Selected Stone Baked baguette

To decorate:

  • 2 x 125g Mozzarella, drained
  • 3 Olives

  

Method

  1. Slice the baguette on an angle into 8 slices, then brush with 2 tbsps of olive oil.
  2. Toast the bread on both sides in a griddle pan or under the grill for a couple of minutes until golden brown.
  3. Roughly chop the mushrooms, spinach and sundried tomatoes.
  4. Heat 1 tbsp of olive oil in a large frying pan and cook the mushrooms and garlic together for 5-10 minutes until the mushrooms have softened.
  5. Add the chopped sundried tomatoes and spinach and cook for a couple more minutes until the spinach has wilted.
  6. Pour over the balsamic vinegar and season with the salt and pepper and cook for a couple more minutes, then spoon on top of the toasts.
  7. Thinly slice the mozzarella then either use a ghost shaped cookie cutter or a knife to cut into 8 ghost shapes.
  8. Top the bruschetta with the mozzarella ghosts then use the olives to create the ghosts faces and serve.
