Ghost BOO-schetta

Kick start spooky season the right way with these ghoulsly good BOO-schetta!

Ingredients
- 250g Chestnut Mushrooms
- 90g Spinach
- 60g Sun Dried Tomatoes
- 2 Garlic Cloves, crushed
- 3 tbsp Olive Oil
- 2 tbsp Balsamic Vinegar
- Pinch of Salt
- Pinch of Pepper
- 1 Specially Selected Stone Baked baguette
To decorate:
- 2 x 125g Mozzarella, drained
- 3 Olives
Method
- Slice the baguette on an angle into 8 slices, then brush with 2 tbsps of olive oil.
- Toast the bread on both sides in a griddle pan or under the grill for a couple of minutes until golden brown.
- Roughly chop the mushrooms, spinach and sundried tomatoes.
- Heat 1 tbsp of olive oil in a large frying pan and cook the mushrooms and garlic together for 5-10 minutes until the mushrooms have softened.
- Add the chopped sundried tomatoes and spinach and cook for a couple more minutes until the spinach has wilted.
- Pour over the balsamic vinegar and season with the salt and pepper and cook for a couple more minutes, then spoon on top of the toasts.
- Thinly slice the mozzarella then either use a ghost shaped cookie cutter or a knife to cut into 8 ghost shapes.
- Top the bruschetta with the mozzarella ghosts then use the olives to create the ghosts faces and serve.
