  • 40g Salted Butter
  • 2 cloves Garlic
  • 30ml Squeezy Honey
  • 100g Feta Cheese
  • 50g Greek Yogurt
  • 1 large tsp Mayonnaise
  • Black Pepper
  • Large sprig of Fresh Rosemary
  • Small sprigs of Fresh Thyme

Method

  1. Cut the ends off the baguette and discard, then cut the baguette into 15 slices, slicing slightly on the diagonal and toast them.
  2. Crumble the feta and add to a small food processor, along with the yogurt and mayonnaise, then process until smooth.
  3. Spread this over the toasted bread slices and put onto a serving plate.
  4. Peel and finely chop the garlic.
  5. Melt the butter in a frying pan and add the steak, rosemary and garlic. Fry on each side for 2 minutes, basting with the butter as you cook.
  6. Remove the steak from the pan and allow to rest for 10 minutes.
  7. After removing the fat, thinly cut the steak into 30 slices.
  8. Top each crostini with two slices of steak.
  9. Discard the rosemary from the frying pan, add the honey to the butter in the pan and gently heat.
  10. Drizzle this over the steak, garnish with some thyme, sprinkle with black pepper and serve.
