Pickle Brined Chicken Bites

Ingredients

  • 600g Chicken Breast
  • 350g Crinkle Cut Gherkins
  • 100g Self-Raising Flour
  • 100g Cornflour
  • 2 tbsp Paprika
  • 1 tbsp Garlic Powder
  • 1 tsp Chilli Powder
  • ½ tsp Salt
  • ½ tsp Pepper
  • Vegetable Oil for frying

Aioli:

  • 120g Mayonnaise
  • 2 Garlic Cloves, crushed
  • 1 tbsp Lemon Juice
  • 1 tbsp Flat Leaf Parsley, roughly chopped
  • Pinch of Salt
  • Pinch of Pepper  

    

Method

  1. Cut the chicken into around 5cm pieces.
  2. Pour the brine from the jar of gherkins over the chicken, then cover and leave to marinate for a minimum of 4 hours.
  3. Mix the flour, cornflour and all the spices.
  4. Heat the vegetable oil in a fryer or deep pan to 170°C.
  5. Remove the chicken from the brine and coat it in the flour mixture.
  6. Place the chicken back into the brine, then return to the chicken flour mixture until fully coated.
  7. Fry the chicken in batches for 6-8 minutes until cooked through inside, and golden and crispy on the outside.
  8. Mix all the ingredients for the aioli.
  9. Serve the fried chicken topped with the aioli and skewered with a gherkin.
