Pickle Brined Chicken Bites

Ingredients
- 600g Chicken Breast
- 350g Crinkle Cut Gherkins
- 100g Self-Raising Flour
- 100g Cornflour
- 2 tbsp Paprika
- 1 tbsp Garlic Powder
- 1 tsp Chilli Powder
- ½ tsp Salt
- ½ tsp Pepper
- Vegetable Oil for frying
Aioli:
- 120g Mayonnaise
- 2 Garlic Cloves, crushed
- 1 tbsp Lemon Juice
- 1 tbsp Flat Leaf Parsley, roughly chopped
- Pinch of Salt
- Pinch of Pepper
Method
- Cut the chicken into around 5cm pieces.
- Pour the brine from the jar of gherkins over the chicken, then cover and leave to marinate for a minimum of 4 hours.
- Mix the flour, cornflour and all the spices.
- Heat the vegetable oil in a fryer or deep pan to 170°C.
- Remove the chicken from the brine and coat it in the flour mixture.
- Place the chicken back into the brine, then return to the chicken flour mixture until fully coated.
- Fry the chicken in batches for 6-8 minutes until cooked through inside, and golden and crispy on the outside.
- Mix all the ingredients for the aioli.
- Serve the fried chicken topped with the aioli and skewered with a gherkin.
