Tomato Bruschetta with Soft Cheese

Crisp bruschetta teams with tangy tomato to bring you this marvellous Mediterranean recipe.

Ingredients
- 220g Specially Selected Piccolo Tomatoes
- 220g Specially Selected Golden Cherry Tomatoes
- 5 Cloves Garlic
- 3 tbsp Specially Selected British Cold Pressed Rapeseed Oil
- Salt and Black Pepper
- 1 pack Ciabatta Rolls
- 100g Soft Cheese
- Handful of Fresh Basil Leaves
Method
- Pre-heat oven to 200°C/Gas Mark 4.
- Take the tomatoes off the vine and slice into halves.
- Finely slice the garlic.
- Place the tomatoes and garlic into a roasting tin, drizzle with the oil and season with salt and pepper.
- Roast for 15-20 minutes until the tomatoes are jammy and the garlic golden. Allow to cool.
- Cut the ciabatta rolls on the diagonal into 2cm slices and either griddle or toast.
- Spread each toast with soft cheese.
- Divide the tomato and garlic mixture between the toast.
- Scatter over the basil leaves.
- Serve immediately.
