Tomato Bruschetta with Soft Cheese

Crisp bruschetta teams with tangy tomato to bring you this marvellous Mediterranean recipe.

Ingredients

  • 220g Specially Selected Piccolo Tomatoes
  • 220g Specially Selected Golden Cherry Tomatoes
  • 5 Cloves Garlic
  • 3 tbsp Specially Selected British Cold Pressed Rapeseed Oil
  • Salt and Black Pepper
  • 1 pack Ciabatta Rolls
  • 100g Soft Cheese
  • Handful of Fresh Basil Leaves

  

Method

  1. Pre-heat oven to 200°C/Gas Mark 4.
  2. Take the tomatoes off the vine and slice into halves.
  3. Finely slice the garlic.
  4. Place the tomatoes and garlic into a roasting tin, drizzle with the oil and season with salt and pepper.
  5. Roast for 15-20 minutes until the tomatoes are jammy and the garlic golden. Allow to cool.
  6. Cut the ciabatta rolls on the diagonal into 2cm slices and either griddle or toast.
  7. Spread each toast with soft cheese.
  8. Divide the tomato and garlic mixture between the toast.
  9. Scatter over the basil leaves.
  10. Serve immediately.
