Rum, mint & lime infusions galore in this summer favourite

    ½ fresh Lime, cut into 4 wedges
    2 tsp The Pantry Caster Sugar
    12 fresh Mint Leaves
    65ml Old Hopking White Rum
    Splash Soda Water
    Ice Cubes
    Fresh Mint sprigs, to garnish
    Place the ice cubes in a clean tea towel and crush with a rolling pin. Put the lime wedges and sugar in a glass and mash with the end of a rolling pin. Squash the mint leaves into the lime juice. 
    Half fill the glass with crushed ice and pour in the rum. Stir until the sugar has dissolved. Top with crushed ice, soda water and garnish with mint.
