Lebkuchen Cheesecake with Mulled Cherries

Ingredients

For the cheesecake filling:

  • 150g Mascarpone
  • 100g Greek Yogurt
  • 3 tbsp Icing Sugar
  • ½ tsp Vanilla Essence

For the mulled cherries:

  • 100ml Glühwein
  • 200g Cherries
  • 50g Caster Sugar

  

Method

  1. Remove the stones from the cherries carefully using a sharp knife and place the cherries into a heavy based saucepan. Add the Glühwein and the sugar and cook for 10-15 minutes on a medium high heat until the fruit is soft and sticky, then set aside to cool.
  2. Reserve a few Lebkuchen for decoration and crumble the rest into two long stemmed coupe glasses.
  3. Mix the cheesecake filling together until smooth and spoon this over the crumbled Lebkuchen, top with the mulled cherries and garnish with the remaining Lebkuchen.
