Lebkuchen Cheesecake with Mulled Cherries

Ingredients
For the cheesecake filling:
- 150g Mascarpone
- 100g Greek Yogurt
- 3 tbsp Icing Sugar
- ½ tsp Vanilla Essence
For the mulled cherries:
- 100ml Glühwein
- 200g Cherries
- 50g Caster Sugar
Method
- Remove the stones from the cherries carefully using a sharp knife and place the cherries into a heavy based saucepan. Add the Glühwein and the sugar and cook for 10-15 minutes on a medium high heat until the fruit is soft and sticky, then set aside to cool.
- Reserve a few Lebkuchen for decoration and crumble the rest into two long stemmed coupe glasses.
- Mix the cheesecake filling together until smooth and spoon this over the crumbled Lebkuchen, top with the mulled cherries and garnish with the remaining Lebkuchen.
