Cauliflower Shawarma Wraps

These quick and easy wraps make the perfect meat-free dish.

Contains over 15g of fibre per serving!

Ingredients

  • 1 Cauliflower, broken into florets
  • 1 Heaped tsp Paprika
  • ½ Flat tsp Chilli Powder
  • 1 Heaped tsp Ground Cumin
  • ½ Flat tsp Turmeric
  • 1 Flat tsp Garlic Granules
  • ½ Flat tsp Ground Black Pepper
  • ½ Flat tsp Ground Ginger
  • Good Pinch Ground Cinnamon
  • ½ Flat tsp Salt
  • 80ml Sunflower Oil

Top Tip: Add a pack of moroccan falafels for an extra fibre boost!


For the wraps:

  • 4 High Protein Flame Baked Flatbreads
  • 200g Cherry Tomatoes
  • ½ Cucumber
  • 15g Fresh Coriander
  • 1 Red Onion, Finely Sliced
  • 100ml White Wine Vinegar


For the dressing:

  • 75g Houmous
  • 30ml Lemon Juice
  • ½ Flat tsp Paprika

Method

  1. Place the onion and vinegar into a bowl and set aside to pickle, stirring occasionally.
  2. In another bowl, add all the spices and the oil for the cauliflower.
  3. Add the cauliflower florets and rub in the oil and spices.
  4. Cook in the air fryer for 20 minutes at 200°C/Gas Mark 6, shaking the drawer every 5 minutes.
  5. In the meantime, finely chop the cucumber, tomatoes and coriander and mix in bowl.
  6. In another bowl mix the houmous, the lemon juice and paprika.
  7. Place some cauliflower on each flatbread with salad and onion rings, then drizzle over some dressing.
