    Feta, Orange and Beetroot Salad

    400g mixed salad leaves (such as arugula, baby spinach, and lettuce)

    1 medium beetroot, cooked, peeled, and thinly sliced

    1 large orange, peeled and segmented

    120g crumbled feta cheese

    70g walnuts, roughly chopped

    2 tbsps extra virgin olive oil

    1 tbsp balsamic vinegar

    1 teaspoon honey

    Salt and pepper to taste

    Method

    In a large salad bowl, combine the mixed salad leaves, beetroot slices, orange segments, crumbled feta cheese, and chopped walnuts.

    In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

    Drizzle the dressing over the salad and gently toss everything together until all the ingredients are coated in the dressing.

    Taste and adjust the seasoning if needed.

    Serve the salad immediately, as the fresh ingredients are at their best when enjoyed right away.
