Three Cheese Chicken Alfredo

Ingredients

  • 600g Chicken Breast
  • 250g Penne Pasta
  • 1 Large Onion
  • 3 Garlic Cloves
  • 30g Salted Butter
  • 30ml Olive Oil
  • 400ml boiling water
  • 2 Chicken Stock Cubes
  • 500ml Double Cream
  • 25ml Lemon Juice  
  • 120g Parmesan, grated
  • 120g Mozzarella, grated
  • 120g Double Gloucester Cheese, grated
  • Sea Salt and Black Pepper
  • 1 heaped tsp Paprika  
  • 1 pot Fresh Parsley, chopped  

Method

  1. Chop the chicken into small chunks.
  2. Peel and dice the onion.
  3. In a large skillet or wok, heat the oil and the butter. Add the chicken and onion to the pan and sauté for 5 minutes.
  4. Peel and mince the garlic and add to the pan then cook for another 5 minutes.
  5. Pour over the boiling water and crumble over the stock cubes. Cook for a few minutes.
  6. Cook the pasta in some salted boiling water with a splash of olive oil for 6 minutes. Strain and add the pasta to the chicken pot.
  7. Add the cream and lemon juice and cook another few minutes.
  8. Then, add the grated parmesan, double Gloucester and mozzarella and stir through until melted. Sprinkle over the chopped parsley and paprika and serve.
