A gin spritzer with puréed rhubarb and Summer Fruits spring water – it’s as fresh as Spring air!
60g Fresh Rhubarb
5g Caster Sugar
Juice of ½ Lemon
160ml Orange Gin
Wipe the rhubarb and cut into small pieces.
Add to a small pan with the lemon juice and sugar.
Gently cook for a few minutes until soft, then purée.
Allow to cool, then divide the syrup between 2 glasses.
Add 80ml of gin to each glass, add ice and stir well.
Top with the sparkling water and serve with a rhubarb or celery stirrer.
