    Grilled Tuna in a Brazilian Marinade

    2 x 220g packs Specially Selected Yellowfin Tuna Steaks 
    Marinade – 
    6 x Cloves Garlic
    1 x Small Red Onion
    ½ Red Pepper
    1 x Green Chilli – approx. 20g
    80ml Baron St Jean White Wine
    80ml Specially Selected Olive Oil 
    30ml Bramwells Tomato Sauce
    5g Fresh Coriander
    Sea Salt and Black Pepper
    Peel and finely chop the garlic
    Peel, half and finely chop the red onion
    Discard any white pith from the pepper and chop finely 
    Cut the green chilli in half, and finely chop 
    Finely chop the coriander 
    Put all the above into a bowl, add the white wine, olive oil and tomato sauce 
    Season with some salt and pepper and mix well
    With some paper kitchen roll – pat the tuna fillets dry
    Put them into a non-metallic tray – pour over the marinade and refrigerate for a couple of hours – or overnight
    Preheat the grill to high
    Remove the steaks from the marinade and grill for about 4 to 5 minutes each side
