Aperini Granita

Boozy and more-ish - this dessert makes the perfect Summer treat.

Ingredients

  • 240ml Water
  • 180g Sugar
  • 1 Pink Grapefruit, cut into wedges
  • 85ml Orange Juice
  • 50ml Gin
  • 50ml Aperini

To serve:

  • 2 Orange Wedges
  • Vanilla Ice cream/Greek Yoghurt

  

Method

  1. Take a small saucepan, tip in the sugar and the water, and place this on a medium heat. Stir until the sugar has fully dissolved and allow this to cool.
  2. Squeeze the grapefruit wedges into the sugar syrup, then add the Aperini and Gin and stir well.
  3. Pour the mixture into a shallow freezable container with a lid.
  4. Once the liquid begins to freeze, take a spatula and scrape the slush around, repeating this every hour, then allow it to continue freezing until you have solid granita - it should have a similar consistency to shaved ice.
  5. Serve in glasses over Greek yoghurt or vanilla ice cream and garnish with orange wedges.
