Aperini Granita

Boozy and more-ish - this dessert makes the perfect Summer treat.

Ingredients
- 240ml Water
- 180g Sugar
- 1 Pink Grapefruit, cut into wedges
- 85ml Orange Juice
- 50ml Gin
- 50ml Aperini
To serve:
- 2 Orange Wedges
- Vanilla Ice cream/Greek Yoghurt
Method
- Take a small saucepan, tip in the sugar and the water, and place this on a medium heat. Stir until the sugar has fully dissolved and allow this to cool.
- Squeeze the grapefruit wedges into the sugar syrup, then add the Aperini and Gin and stir well.
- Pour the mixture into a shallow freezable container with a lid.
- Once the liquid begins to freeze, take a spatula and scrape the slush around, repeating this every hour, then allow it to continue freezing until you have solid granita - it should have a similar consistency to shaved ice.
- Serve in glasses over Greek yoghurt or vanilla ice cream and garnish with orange wedges.
