Mini Tiramisu Cups

Layers of coffee-soaked sponge, creamy mascarpone and a dusting of cocoa powder make these mini tiramisu cups feel indulgent yet effortless.
Ingredients
- 200g Emporium Mascarpone
- 200ml Cowbelle Double Cream
- 2 tbsp The Pantry Icing Sugar
- 1 tsp Stonemill Vanilla Extract
- 8 Specially Selected Sponge Fingers
- 150ml strong Alcafé Americano Coffee, cooled
- 1 tbsp The Pantry Cocoa Powder
- 20g Choceur Dark Chocolate, finely grated (optional)
Method
- Brew the coffee and allow it to cool.
- Whisk together the mascarpone, double cream, icing sugar and vanilla until thick and smooth.
- Break the sponge fingers into pieces and quickly dip into the cooled coffee.
- Divide half of the soaked sponge fingers between four serving glasses.
- Spoon over half of the mascarpone mixture.
- Repeat the layers.
- Dust generously with cocoa powder and finish with grated dark chocolate if using.
- Serve immediately or chill until required.
Top Tip
For a chocolate twist, add a layer of crushed Belmont Chocolate Chip Cookies between the sponge and mascarpone layers.
