Rhubarb & Orange Spritzer

Ingredients

  • 60g Fresh Rhubarb
  • 5g Caster Sugar
  • Juice of ½ Lemon
  • 160ml Orange Gin
  • Summer Fruits
  • Sparkling Water
  • Ice

Method

  1. Wipe the rhubarb and cut into small pieces.
  2. Add to a small pan with the lemon juice and sugar.
  3. Gently cook for a few minutes until soft, then purée.
  4. Allow to cool, then divide the syrup between 2 glasses.
  5. Add 80ml of gin to each glass, add ice and stir well.
  6. Top with the sparkling water and serve with a rhubarb or celery stirrer.
