Rhubarb & Orange Spritzer

Ingredients
- 60g Fresh Rhubarb
- 5g Caster Sugar
- Juice of ½ Lemon
- 160ml Orange Gin
- Summer Fruits
- Sparkling Water
- Ice
Method
- Wipe the rhubarb and cut into small pieces.
- Add to a small pan with the lemon juice and sugar.
- Gently cook for a few minutes until soft, then purée.
- Allow to cool, then divide the syrup between 2 glasses.
- Add 80ml of gin to each glass, add ice and stir well.
- Top with the sparkling water and serve with a rhubarb or celery stirrer.
