Creamy Cajun Chicken Pasta

Tender Cajun-spiced chicken, sweet peppers and onions tossed through creamy Fusilli for a comforting pasta dish that's packed with flavour but mild enough for the whole family to enjoy.
Ingredients
- 300g Everyday Essentials Fusilli
- 2 British Chicken Breast Fillets, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 brown onion, thinly sliced
- 2 tsp Stonemill Cajun Seasoning
- 1 tbsp olive oil
- 2 garlic cloves, crushed
- 150ml Cowbelle Double Cream
- 250ml chicken stock (made with stock cube)
- 30g grated Parmesan
- Handful of parsley, chopped (optional)
- Salt and black pepper to season
Method
1.Bring a large pan of salted water to the boil and cook the fusilli according to the pack instructions until al dente.
2. While the pasta cooks, toss the chicken slices with 1½ tsp Cajun seasoning.
3. Heat the olive oil in a large frying pan over a medium-high heat. Cook the chicken for 5-6 minutes until golden and cooked through.
4. Remove from the pan and set aside.
5. In the same pan, add the onion and peppers.
7. Cook for 3-4 minutes until softened but still with a little bite. Stir in the garlic and remaining Cajun seasoning and cook for 30 seconds.
8. Pour in the chicken stock and simmer for 2 minutes, then tir in the cream and Parmesan until smooth.
9. Return the chicken to the pan and add the drained fusilli, toss until coated in the creamy Cajun sauce.
10. Season to taste.
11. Sprinkle with parsley and extra Parmesan if desired.
