A fresh twist on sausages & mash, served with seared tomatoes and pesto infused mash. Delish!
454g Butchers Select sausages
500g White potatoes - peeled and diced
30ml Milk
1 tbsp Green pesto
220g Specially Selected Piccolo Tomatoes
Salt and pepper to season (optional)
Place the potatoes in a pan and cover with cold water.
Bring to the boil, turn down to a simmer.
Once cooked through drain using a colander and allow to steam dry for a couple minutes.
Pan fry the sausages, turning halfway through cook until they get lots of colour on the skin.
When the sausages are cooked add the cherry tomatoes to the pan cook until, the begin to soften and split.
Mash the potatoes adding the milk and 1tbsp pesto.
Remove the sausages from the pan and serve with the mash and tomatoes seasoning with a little salt and pepper.
