Garlicky Charred Green Beans And Beef Rice Bowl

Inspired by a Din Tai Fung classic, we've got charred beans with loads of garlic and salty peanuts with the addition of some crispy beef mince. Dressed in a sweet sticky soy sauce, it's low effort and high reward.

Ingredients:
- 400g Green Beans
- 6 Garlic Cloves
- 4 tbsp Light Soy Sauce
- 4 tbsp Light Brown Sugar
- 2 x 250g Pouch Rice
- 4 tbsp Olive Oil
- 500g Beef Mince
- ½ Chicken Stock Cube
- 4 Eggs
- 60g Salted Peanuts
- 25g Fresh Coriander
- Vegetable Oil
- 1 Lime
- Salt
- Black Pepper
Method:
- Trim the green beans and cut them in half. Peel and finely chop the garlic. Roughly crush the peanuts and pick the coriander leaves and set them aside for garnish later.
- Add the light soy sauce and light brown sugar to a small pan over a medium heat and mix well, stirring until the sugar has dissolved. Once dissolved, let it bubble away for 5 mins, until thickened, then set aside.
- Heat a quarter of the olive oil in a wok or large frying pan over a high heat and add half the beef mince, cooking for 5-6 mins until crispy and golden, then remove with a slotted spoon to drain on kitchen paper. Repeat with another quarter of the oil and the rest of the mince.
- Add the remaining oil to the pan along with the green beans and cook for a couple of minutes, until charred and blistered, then remove with the slotted spoon to drain with the mince. Add the garlic to the pan and cook for 30 seconds, then tip the beans back in along with the beef. Crumble in the stock cube and pour in the sweet soy sauce.
- Meanwhile, reheat your microwave jasmine rice according to packet instructions.
- For the eggs, pour vegetable oil into a frying pan to a depth of about 5mm and heat over a medium-high heat. Crack in the eggs and cook until crispy, basting the yolks until cooked to your liking, then remove and drain.
- To serve, divide the rice between bowls and top with the garlicky green beans and crispy mince and your fried egg. Finish with the coriander leaves and peanuts and lime wedges for squeezing.
