Hot Honey Smashed Pork Tacos with Kiwi Salsa

The next time you buy sausages from the supermarket, give these a try. The sausage meat will be spread onto tortillas and cooked until juicy. Topped with a red chilli, lime and kiwi salsa to cut through the richness of the sausagemeat, adding a little more fresh heat, served with sour cream.

Ingredients:
- 400g Pork Sausages
- 3 tbsp Hot Honey
- 8 Mini White Tortillas
- 200g Sour Cream
- 150g White Cabbage
- 100g Feta
- 2 Red Chillies
- 2 Limes
- 4 Kiwi
- 15g Fresh Coriander
- 1 tbsp Olive Oil
- Salt
Method:
- Remove the casing off the sausages. Stir the sausagemeat and hot honey together, then spread the sausagemeat onto one side of the tortillas.
- Peel and finely mince the kiwis, chillies and coriander (for the salsa). Add both into a bowl, zest in ¼ of the lime, then stir together and season with salt and lime juice.
- Thinly shave the cabbage into a bowl. Set aside
- Place a frying pan over medium heat. Once hot, cook the sausagemeat, sausage side down, 2-3 mins, or until cooked through. Then flip and toast the tortilla for a couple of seconds. Transfer to a tray and cover, whilst you cook the remaining tortillas.
- Toss the cabbage slaw with a drizzle of olive oil and season with salt.
- Share the tacos between plates, top with some soured cream, cabbage slaw, kiwi salsa and crumble over the feta. Squeeze remaining lime to taste.
