Frightfully Dark and Stormy

Ingredients

  • 120g fresh Ginger, sliced
  • 200g Caster Sugar
  • 80ml Water
  • 60ml Spiced Rum
  • 160ml Soda Water
  • 20ml Lime Juice
  • 1 tube Black Writing Icing, from our Halloween Macaron/Gingerbread decoration kit
  • 10 drops Green Food Colouring
  • 80ml Double Cream, whipped to soft peaks
  • 6 Ice Cubes
  • 1 slice of Lime
  • 1 Paper Bat, optional for decoration

  

Method

  1. Place the ginger and sugar in a saucepan with the water and bring to a rapid boil. Reduce to a simmer for a few minutes until the mixture is thick enough to coat the back of a spoon.
  2. Allow the mixture to cool, discard the ginger then mix half of the syrup with the rum to make a thick, sticky ginger rum syrup. Keep the remaining syrup in case more is needed to adjust the taste.
  3. Take a glass and pipe a zigzag around the rim using the black writing icing.
  4. Fill the glass with ice. Pour in the ginger rum syrup, add the lime, top with soda water and a blob of cream. Using a teaspoon place the food colouring on the inside of the rim so it seeps down into the drink.
  5. Garnish with a lime slice and a paper bat.
