Christmas Fizz.

Ingredients

  • 20ml Raspberry Liqueur
  • Prosecco, to top
  • 1 large Orange, for the fruit ice
  • A handful of Raspberries, for the fruit ice
  • Rosemary Sprig, to garnish

Method

  1. You will need a large, square ice cube tray.
  2. To prepare the ice, first cut the orange into slices and then cut those slices into halves. Place four of the halves into the ice cube tray, with the flat part at the bottom of the tray and arrange in a circular motion, overlapping as you go. It should resemble a rose. Now pop a raspberry in the middle of the orange slices. Fill with water and freeze overnight.
  3. Pour about 20ml of the raspberry liqueur into the bottom of a coupe glass.
  4. Place the prepared fruit ice in the glass and top with the Prosecco.
  5. Finish with a sprig of rosemary.
