Pumpkin Pie Smoothie Bowl

Start your day off with this refreshing, seasonal smoothie bowl.

Serves: 1 person   |   Prep time: 10 minutes, plus 2 freezing time for 1/2 banana

Ingredients

For the Smoothie:

  • 1 small Banana, frozen
  • 100g Pumpkin Purée, cooked, cooled and blended
  •   ½ tsp Cinnamon
  •   ½ tsp Honey
  • 1 tbsp Peanut Butter
  • 3 heaped tbsp Greek Yogurt
  • 150ml Almond Milk
  • A few drops of Vanilla Extract

For the toppings:

  •   ½ Fig, sliced into quarters
  • 1 tbsp Berry Granola
  • 1 tsp Pomegranate Seeds
  • 2 tsp Peanut Butter, to drizzle over
  • 5g Pumpkin Seeds

  

Method

  1. Place all the smoothie ingredients in a blender and blitz until smooth.
  2. Warm the almond or peanut butter slightly in the microwave for 10 seconds.
  3. Serve in a bowl and sprinkle over all the toppings and drizzle over the nut butter.
