Kevin the Carrot Cake Pops

Ingredients
- 280g Holly Lane angel cake
- 100g The Pantry icing sugar
- 50g Cowbelle salted butter
- 1tsp Milk
To decorate
- 250g The Pantry Ready To Roll White Icing
- 8 drops Green food colouring
- 10 drops orange food colouring
- 3 Dominion strawberry laces
- 1 Dominion liquorice allsorts (plain liquorice barrel)
- 12 cake pop/lollipop sticks
Method
- Using an electric hand mixer or a wooden spoon beat together the butter, icing sugar and milk in a bowl until pale and fluffy.
- Take 200g of the white icing and add the orange food colouring, mix well with your hands until you have a soft ball of orange icing, repeat with the other 50g white icing adding the green food colouring and wrap in cling film.
- Take the angel cake and lay it flat on a board so the layers run horizontally and slice into 6 vertically going though each layer.
- Lay each slice flat (again so the layers run horizontal) and carve each into a carrot sharp allowing the back to remain flat but rounding off the front.
- Add a cake pop stick into the base and push halfway up.
- Cover each carrot shape with the buttercream using a butter knife.
- Roll out the orange icing into a large thin rectangle and cut 6 rectangles, these must be big enough to cover each carrot shape.
- Cover the carrot shapes with a the orange icing and wrap any excess neatly round the back and gently tease the edges down using your fingers and trim any surplus icing away with a knife.
- You can use a butter knife to score little carrot lines along the edges and For Kevin’s feet.
- Make the green carrot tops by rolling the green fondant into thin strands and cut each strand into 6 pressing them together at the base to create Kevin’s hair.
- Poke a little hole in the top of Kevin’s head and brush with a little water to attach his hair.
- Cut the liquorice into half crescent moon shapes for Kevin’s mouth and roll 12 tiny balls of liquorice for his eyes, press these into the carrot pops.
- Cut the strawberry laces into 12 arms and attach with a tiny bit of water.
