Tomato Margarita

Ingredients

  • 5 Cherry Tomatoes
  • 2 tsp Sugar
  • 80ml Tequila
  • 30ml Freshly Squeezed Orange Juice
  • 5 Ice Cubes
  • 50ml Lime Juice
  • 1 tbsp Sea Salt

To garnish:

  • 7 Small Cherry Tomatoes  

Method

  1. Make the syrup by chopping 5 of the tomatoes in half and adding them to a small saucepan with the orange juice, sugar and 4tbsp water.
  2. Cook this on a medium heat for five minutes until you have a sticky syrup.
  3. Drain the syrup through a sieve, discarding the tomato skins and seeds. Allow the syrup to cool in the fridge
  4. Place the salt on a saucer and dip the rim of the glasses into the salt
  5. Place all the ingredients into a cocktail shaker and leave them in the shaker for a few minutes to chill.
  6. Once chilled, shake vigorously and serve in small, chilled glasses with the cherry tomatoes for garnish.
