Chickpea Monster Sandwich

Recipe

  • 400g Tin Chickpeas
  • ½ Celery Stick
  • ½ Small Red Onion
  • 1 tbsp Dijon Mustard
  • 1 tbsp Lemon Juice
  • ½ tsp Paprika
  • Pinch of Salt and Pepper
  • 4 Slices Wholemeal Bread
  • 40g Spinach
  • 1 Avocado

Ingredients

  1. Crush the chickpeas, using a fork until you achieve a chunky paste texture.
  2. Add the celery, red onion, mustard, paprika, lemon juice, salt and pepper and mix well until combined.
  3. Build the sandwich by spreading half of the chickpea mixture onto the 2 base pieces of bread and top with the spinach and sliced avocado.
  4. Top with the remaining pieces of bread and stack to serve.
