Chickpea Monster Sandwich

- 400g Tin Chickpeas
- ½ Celery Stick
- ½ Small Red Onion
- 1 tbsp Dijon Mustard
- 1 tbsp Lemon Juice
- ½ tsp Paprika
- Pinch of Salt and Pepper
- 4 Slices Wholemeal Bread
- 40g Spinach
- 1 Avocado
Ingredients
- Crush the chickpeas, using a fork until you achieve a chunky paste texture.
- Add the celery, red onion, mustard, paprika, lemon juice, salt and pepper and mix well until combined.
- Build the sandwich by spreading half of the chickpea mixture onto the 2 base pieces of bread and top with the spinach and sliced avocado.
- Top with the remaining pieces of bread and stack to serve.
