Lollipop Sandwiches

Ingredients

  • 3 sliced Hot Dog Rolls, cut in half (you need 5 halves for this recipe)
  • 50g Salted Butter

Filling 1:

  • 1/2 tin Tuna in Spring Water
  • 1 tsp Mayo
  • 10g Sweetcorn
  • 1 slice Cheddar, chopped into chunks
  • 10g Red Onion, chopped

Filling 2:

  • 1 slice Mozzarella, folded in half
  • 2 tsp Green Pesto
  • 1 Vine Tomato, sliced

Filling 3:

  • 30g cooked sliced Ham
  • 30g sliced Cheddar
  • 6 leaves Baby Spinach

Filling 4:

  • 3 Pepperoni slices
  • 2 Cherry Tomatoes, sliced in half
  • 1 slice Mozzarella, folded in half

Filling 5:

  • 1 Medium Egg, boiled
  • 2g Cress/chopped Parsley
  • 4 tbsp Mayonnaise
  • A pinch of Sea Salt and cracked Black Pepper  

  

Method

  1. Make up the tuna mayo crunch in a small bowl.
  2. Boil and peel the egg, then chop this into bitesize pieces. Mix with mayonnaise, cress and a pinch of salt and pepper.
  3. Butter the hot dog rolls and fill each with a filling from the ingredients list.
